A Piece of Cupcake: Ginger Cupcakes

It’s cupcake time! I have been so busy with school work and reading that I hadn’t had time to do any baking. However, my parents own a catering company and needed some cupcakes. For this order, I made ginger cupcakes with ginger cream cheese frosting. Luckily, I had a few left over that I could snag for myself ;-)

I used the "Ginger Cupcakes with Ginger Cream Cheese Frosting" recipe from 101 Cookbooks. It is a pretty simple recipe. The most annoying part was chopping the candied ginger because it became super sticky. I had a problem with it clumping up in the batter. However, after mixing quite a bit, it was able to separated. Other than that making and baking was smooth sailing.

Let me just tell you that this is a freakin' awesome cupcake! The cake is sweet with a hint of ginger.There are small pieces of candied ginger throughout which are a little spicy, but I think the sweetness of the cake compliments this well. The cream cheese frosting is also sweet, but picks up the ground ginger so the spiciness lingers in the back of my mouth a little longer. The cake and the frosting together are absolute ginger perfection. Try this recipe now! Even if you're not a huge ginger fan, I would suggest trying this recipe because the sweetness of the cake dulls the intensity of the ginger. Yummm!


As I said earlier, these cupcakes were for a catering job. So I have included a picture of the final decorated product. I started working on the fondant around 8:45 last night, only to realize I didn't have a star cutout. Stores close at nine...ugh! Luckily, I had an extra helping hand to assist in cutting out stars. A cutout would have been so much easier! Anyway, I think they turned out pretty nice.
